Relaxing in South Ambergris Caye

Second Full Day

Some days you just have to lay around and relax. That’s one thing this island is great for: laying around, reading, swimming, eating, laying around….

So we started the morning with a golf cart drive to Blue Water Grill and had pancakes and eggs. Then back to Athens Gate for some reading on the beach.

For lunch we walked back down to Pelican Reef Villas and had really delicious nachos and a great snapper sandwich.

Hung out by the pool at Athens GateĀ for the afternoon and then walked out to the end of the pier and hung out talking with neighbors and watching the sunset.

Then we drove to town and picked up some friends for dinner. It is a small world when your husband knows another auctioneer vacationing on the island. We went to Hidden Treasure for dinner. They are hidden. They are on a back road in a neighborhood but they are worth finding and they will come and pick you up. They specialize in Latin American and Caribbean cuisine and have great food. I wish that I had remembered to take pictures of the entrees but I didn’t and they were excellent. We had barbecued shrimp and snapper and rice and vegetables and our friends had stuffed grouper. We all cleaned our plates. And then desserts – caye lime pie and banana coconut creme pie.

Tomorrow we are going to try trolling for barracuda on the way to Caye Caulker.
